The descriptions of Minotaur are all correct to the image seen in the movie. Everything found though said that there was only one Minotaur: http://www.buzzle.com/articles/minotaur-in-greek-mythology.html
And I couldn’t find anything that suggests that the Minotaur works for Hades, I am guessing they just wanted any kind of scary freaky looking Greek monster to work for Hades in the movie...
